Apple mixture 3 peeled diced apples 1 cup sultanas 3 tbsp Honey Squeeze of lemon juice
Pastry 250gm plain flour Pinch salt 150ml warm full cream milk 60 gm melted butter
Walnut Filling 150gm minced walnuts ½ cup brown sugar ½ tbsp ground cinnamon Juice of ½ lemon 1 teaspoon vanilla

Sift the plain flour and salt into a large mixing bowl. Make a well in the middle and pour in warm milk and butter. Mix into a soft dough and knead for 5 minutes so it feels soft to the touch. Cover the dough and rest it for 20 minutes. Using a rolling pin roll out the pastry to near paper thin, transfer to a clean tea towel. Line the pastry with minced walnuts, brown sugar, ground cinnamon and lemon juice. Then spread the diced apples and sultanas over the minced walnut mixture. To roll into the strudel pick up one end of the tea towel, like a "Swiss roll" roll the pastry on to its self until you have a strudel. Transfer the pastry to a lined baking sheet and bake for 35 to 45 minutes. Glaze with icing sugar mixed with milk, serve with vanilla ice cream.
