Pre heat a large heavy based wok on medium for 6 to 8 minutes. Toss the oil through the prepared meat. You will know that the wok is ready when you can feel the heat at about 30cm above the wok or pan. Evenly scatter the prepared meat in the wok. Using 2 flat wok stirrers move the pieces around for 4 minutes. Remove the cooked meat and rest in a bowl.
Toss in the stir – fry vegetables and toss the vegetables for about 4 minutes or until just cooked. Crank up the wok to full heat add the cooked meat and noodles to the vegetables and tossing like mad add the sauces. Serve at once in pasta bowls garnished with crispy noodles
