An inspirational twist on traditional mash using the Herdsman cheese of the month, Basiron basil pesto cheese.

800g royal blue potato 1/8th cubed, skin on 3 cloves peeled garlic 300gm cubed basil pesto cheese ¼ cup olive oil ½ cup chopped parsley Splash of milk Salt and pepper

Simple steam or pressure steam royal blue potatoes with the garlic cloves to the above cooking times or until they have a very soft and smooth texture when sampling them. Pop the steaming potatoes into a large sauce pan and very roughly crush them with a potato masher. Next, switch to a wooden Beachwood cooking spoon and start mixing like crazy, while mixing all the above flavours until smooth and creamy. You can add a little milk if the potatoes are a little starchy.
