Prep list for Chimi - Churri Sauce
2 cups Italian parsley 3 cloves garlic 2 red chili's chopped 4 tbsp wine vinegar 1/3 cup olive oil 4 tbsp fresh oregano leaves 1 tbsp toasted cumin seeds 2 fresh bay leaves 1 teaspoon black pepper + hint of Tabasco Pinch of salt Juice 1 lemon
Blitz until roughly processed, season to taste, chill to serve
Pre list for the BBQ beef salad
2 / 300gm thick trimmed sirloin steak cooked and rested Hand full rocket leaves 4 firm white nectarines cubed 1 finely chopped red onion 1 cucumber finely sliced 2 punnet MOMOKO Mini Roma tomato, halved 250gm fetta cubed, Danish or Greek

"Scatter on the platter" rocket leaves, stone fruit, onion, tomato and fetta, finely slice rested steak and serve this on a separate platter.
