With melted cheese, bacon and mushrooms (CBM sauce)
Ingredients 500gm Bore worst sausage mince or Italian sausage meat 2 tbsp olive oil
Method Roll out 4 /125 gm meatballs. Prep heat a ribbed or flat grill so itfs nice and hot. Moisten a work area with a little water flatten the meat ball using a pallet knife So itfs 1cm thick, brush with a little olive oil then grill for 3 minutes in 1 side and 1 minute on the next allow 3 minute resting before serving.
CBM sauce Ingredients 200gm lean smoked bacon 1 sliced onion 300gm ¼ portabello mushrooms 2 tbsp olive oil Few sprigs thyme and Hand full of chopped Italian parsley 4 slices Swiss cheese Turkish bread Season to taste

| On medium heat, sauté bacon well done but not crispy in olive oil. Stir in onions and cook until a sweet aroma waft the air like onions from a sausage sizzle. Add mushrooms ¼, thyme to the onions, reduce mushroom juices until therefs no more moisture left. Season to taste with salt, pepper and parsley. Lay sliced Swiss cheese on top of the hot bacon mixture so itfs just melted. Serve with on toasted Turkish bread with a Greek salad. |
