3 tbsp Extra Virgin olive oil 500gm stir-fry meat strips 1 brown onion diced 2 cloves garlic 250gm small mushrooms quartered 2 tbsp Dijon mustard 2 tbsp tomato paste 2-teaspoon paprika ½ cup sour cream Sea salt and pepper

Brown beef strips in olive oil on medium heat for 3 minutes in 2 batches, then set them aside. Stir fry onion until golden brown then add garlic and cook until fragrant, about 5 minutes. Stir in mushrooms and cook for another minute or so. Flavour in with mustard, tomato and paprika then bring to a slow simmer. Stir in cooked meat, sour cream, just a quick simmer to reduce then season to taste.
