Toss the curry powder through the mince and set aside. Meanwhile, pre heat a heavy based ovenproof sautÈ pan to medium heat. Brown the curried flavored mince with a little olive oil until the mince is golden brown and all juices have reduced. Remove and rest the mince. Caramelize the onion until golden; add the resting mince, almonds, onion jam, chutney, sultanas and lemon juice. Spread the mixture evenly around the pan; pour the beaten eggs over the mixture like a frittata. Pop the bay leave on top and bake for 15 minutes or until the Bobotie has set. Serve it like a frittata on yellow rice, couscous or steaming egg noodles with Parmesan cheese and chopped parsley.
