Serves 4 to 6 people Cooking time: 20 minutes Oven time: 15 minutes @ 180c
2 - Chorizo sausages cubed 2 red onions thinly sliced 3tbsp extra virgin olive oil ½ Chinese cabbage thinly sliced 150gm sun dried tomato 1 bunch chopped chives 100gm grated parmesan cheese ½ cup chopped Italian parsley 1kg steaming peeled Purple delight potato

Pre heat a large wok or frying pan on medium heat. Toss in chorizo sausage dry without any oil cook until crispy, remove and keep warm. Caramelize onion in olive oil then return crispy chorizo tom the wok, cook cabbage until tender, add tomato, chives, cheese, parsley, and steaming Purple delight potato and combine well.
Line a roasting dish with baking paper sprinkled with olive oil, pour and spread potato mixture evenly pop the dish in the oven, to crisp up. Serve with a rocket salad and fruit chutney.
