Cha Siu chicken fillet with wok tossed vegetables and egg noodles  Rate Recipe

Prep list
1 kg chicken thigh meat

Cha Siu Marinade
2 cloves crushed garlic
1cm-crushed ginger
½ cup sweet mirin
1-cup dark soy sauce
2 tbsp hoisin sauce
½ cup red rice vinegar
1 tbsp Honey
Dash of sesame oil
1 teaspoon of cinnamon
½ teaspoon Chinese 5 spice
Combine all ingredients and slowly brew sauce for 10 minutes on low heat.
Allow the sauce to cool down before using as a marinade.  Place the pork and marinade in zip lock bag; remove as much air as possible and then zip the bag shut.  Toss the
marinade around and allow 3 hours to develop that Cha Siu flavour.

To cook drip-dry the chicken from the marinade and place on a roasting tray with a rack.  Pre heat wok on high heat, splash a little grape seed oil in the hot wok; Cook
marinated for 10 minutes turning once or twice; remove when cooked through.

To serve thinly slice the cooked cha siu chicken and serve over steaming bowl of Asian stir fry vegetables and noodles.
