Cheese and Strawberry Blintzes  Rate Recipe

Ingredients
250gm mascarpone
250gm ricotta cheese
Zest of 1 lemon
3 tbsp honey
3 drops pure vanilla
2 egg yolks
3 tbsp fresh passion fruit pulp
1 punnet fresh sweet strawberries cut into ¼

Method
Simply combine and fold together mascarpone, ricotta, zest, honey, vanilla, yolks and pulp to a smooth mixture. Fold in strawberries. Or any type of berry you like!

Crêpes
Ingredients
150gm plain flour
2 beaten eggs
30 gm melted butter
375 ml milk
Pinch of salt
Sieve flour into a mixing bowl and make a well in the middle. Crack the eggs into the well add melted butter, milk and a pinch of salt; whisk to a creamy looking texture. Allow the batter to rest in the fridge for 1 hour.  Thin out with milk if necessary before cooking.  Cook 8 to 10 crepes then fill and roll up with blintze mixture brush with butter dusted with sugar and into the oven until golden.
