2 Avocado 500ml Plain yoghurt 350ml Vegetable stock 2 Spring onions, washed and sliced 1/2 Bunch Dill 1 tsp Dijon mustard Salt and pepper Sprigs of Dill for garnish

Cut avocado in half, remove seed and scoop flesh into a food processor. Add all other ingredients and blend to a smooth consistency. Place into a refrigerator until chilled and serve, garnish with dill sprigs.
