Prep list 500gm thinly sliced chicken breast (optional) 3 tbsp extra virgin olive oil 200g mushrooms, sliced 2 crushed garlic gloves 1 grated celeriac 2 jars More than A mouthful gluten free pasta sauce. 500 gm gluten free pasta 500 gm sugar snaps peas (remove top stem) ˝ cup grated pecorino cheese Freshly torn basil leaves for garnish

Method Put the pasta in a pan with plenty of water to boil.Toss olive oil through the sliced chicken pieces until well coated. Pre heat a large wok on medium heat and quickly sauté the chicken pieces until browned, remove cooked chicken from the wok to a separate bowl to rest. Toss in mushroom, crushed garlic and grated celeriac this should take around 30 seconds. Add the pasta sauce and sugar snap peas and simmer. Toss everything together on high heat to reduce the sauce, season with salt & pepper garnished with parmesan cheese.
