Grilled lamb, olive burger with slow roasted tomato & toasted pumpkin Tzatziki  Rate Recipe
Quick, easy and nothing short of delicious!

Prep list
8-roma tomato slowly roasted quarters for roasting
500gm lean Lamb mince (must be very cold)
2 cloves chopped garlic
½ cup chopped kalamatta olives

Mould into 8 patties then refrigerate

Tzatziki
150gm diced Japanese pumpkin dusted with cumin fire roasted until golden
½ continental cucumber grated, strain out juices
1 cup Greek style yoghurt
1 tbsp lemon juice
¼ cup chopped mint
Season to taste

Mix and stir everything together. Set aside
Preparation time:     15 minutes
Cooking time:           40 minutes for the tomato @1600c
                                10 minutes for the burger


Assemble

1. Grill lamb on medium heat with no fat.  Turn the patties when you see     
    their juices rise. Turn twice.
2. Lightly toast some Turkish bread
3. Spread some Tzatziki on the bread topped with cooked lamb
4. Serve with rocket and roasted tomato
