Sweet Potato
500gm Peeled Asian sweet potato then 2cm cubed 1 red capsicum 3cm cubes 1-teaspoon fresh ginger crushed 2 tbsp fresh rosemary 2 cloves of crushed garlic 2 tbsp extra virgin olive oil
Method Toss sweet potato, capsicum, ginger, herbs, garlic and olive oil together. Spread them evenly then roast until golden.
Lamb Ingredients Zest of 1 lemon 1 teaspoon seeded mustard 1 tbsp extra virgin olive oil 2 tbsp chilli jam (deli) 450gm lamb shoulder chop pat dry with kitchen paper

Combine zest, mustard, oil and jam into a thick paste. Toss lamb chops through the seasoning mixture and marinate for 15 minutes.
Using a heavy non-stick pan set on medium heat cook chops 4 minutes per side twice (using no fat) until tender, 5 minutes per side for well done.
Serve grilled lamb chop on roasted sweet potato with a drizzle of extra virgin oil and fruits alfresco seasoning.
