6 / 150gm pork loin steaks, chops or fillet, seasoned with paprika 2 tbsp Avocado oil
Method Grill pork for 3 to 5 minutes per side or just pink.
Curried pumpkin and lentil mash Ingredients 2 tbsp mild curry powder ½ Jap pumpkin peeled and diced 3 tbsp Avocado oil 2 cups chicken stock 1 cup red lentil ½ cup coriander leaves chopped ½ cup sour cream Salt & pepper to taste 2 cups mixed spinach leaves

Pre heat a heavy based pot or sauce pan on medium heat and lightly toast spice until fragrant. Add pumpkin, oil and brown well. Add stock, lentil and cook on low heat until mash consistency. Add more stock if the mixture is too thick. Finish with herb, sour cream and toss in some spinach for some colour.
Serve a spoon full of mash topped with cooked pork and a dollop of fruit chutney.
