4 free range Chicken breast
4 tbsp soy sauce
Grape seed oil
½ brick cooked rice noodles
1 packet of The Herdsman pre made salads
Salad dressing
Coriander leaves for garnishing
Method Pat dry chicken with kitchen paper. Cut chicken into thin strips then marinate in soy sauce for 10 minutes.
To cook the marinated chicken; just fire up a ribbed grill to medium heat; brush chicken with grape seed oil cook each side for 3 minutes while they are cooking baste with sate sauce for extra flavour.
Serve with a The Herdsman fresh green salad tossed through with rice noodles and your favourite salad dressing and a sprinkle of coriander leaves.
Sate Sauce Ingredients 3 tbsp grape seed oil ½ finely chopped red onion 1 tbsp mild curry spice 1/3 cup low salt soy sauce 1/3 cup sweet chilli sauce 3 heaped tbsp peanut butter ½ cup chicken stock
Method Sauté red onion in grape seed oil for 4 minutes, add curry and cook until fragrant. Add soy sauce, chilli sauce, peanut butter and chicken stock; simmer slowly until a thick glossy sauce appears control the consistency with extra chicken if needed.
