4 / 200gm sirloin steak (seasoned with coarsely grounded black pepper corn) 2 tbsp olive oil 2 cloves crushed garlic ½ cup white wine 1/3-cup beef stock or (veal glaze) 100ml cream (optional) Sea-salt & pepper to taste Few chopped chives

500gm gourmet potato cut in half 4-roma tomatos cut 1cm thick then layered between each potato half 4 tbsp extra virgin olive oil 6 cloves crushed garlic ¼ cup fresh rosemary

In a large skillet or frying pan set on medium high heat sear steak to medium rare of 3 minutes per side. Remove and rest cooked steak. Meanwhile reduce heat and cook garlic for 30 seconds or until fragrant. Deglaze with wine and beef stock and reduce by half. Add cream, season and reduce until thick sauce appears. Stir in cooked steak through the sauce sprinkles with a few chopped chives. Serve with roasted gourmet potato & tomato studded with garlic, olive oil, rosemary and stir-fried broccoli leaves.
Roasted gourmet tomato potato method Line a heavy based shallow roasting dish with a domino effect of potato and tomato combination. Drizzle with olive oil, garlic and rosemary then roast. Season with salt and pepper serve at once.
