Serves 4-6
Beef Ingredients 3 sirloin steaks @ 250gm 1 tbsp red or green Thai curry paste ½ tbsp extra virgin olive oil
Rub curry paste onto fish drizzle in olive oil and marinate for 10 minutes
Salad Ingredients ¼ or a brick of cooked rice noodles, cool and cut to 3cm long ½ Chinese radish peeled into traps 1 punnet Momoko tomatoes cut in half ½ burpless cucumber peeled into straps ½ cup chopped dill 2 hand fulls of mixed greens
Toss salad ingredients evenly and portion onto serving plates
Dressing Ingredients ¼ cup of sweet Thai chilli sauce Juice of 1 lime 2 tbsp soy sauce or fish sauce ½ cup extra virgin live oil 1 cup chopped coriander leaves for garnish
Whisk together Thai sauce, juice and soy then whisk in olive oil until smooth and consistent.

| Cooking the steak, pre- heat BBQ of indoor flat grill on medium heat until hot! Drizzle a little grape seed oil on the grill then cook marinated steak with all itfs flavours for 3 minutes on each side, allow the steak to rest before thinly slicing over salad greens. To serve drizzle dressing over salad topped with coriander leaves. |
