Serves 6-8
1 FPU Big Rice salad 4 free range Chicken breast (trimmed to 2cm thickness) 2 heaped tbsp Green Thai curry paste 1 tbsp olive oil
Method Pat dry the chicken breast with kitchen paper then rub in the olive oil and curry paste and allow to marinate for 10 minutes. Cook chicken on the BBQ or use a ribbed grill indoors for 5 minutes each side, rest chicken before serving.
Zee Sweet Salsa 4 firm zee sweet peaches, stoned and cut into small cubes ¼ red onion cut in small cubes 1 corn, kernels only, quickly sauté dry for 2 minutes 1 tbsp sweet Thai chili sauce Juice of one lime ½ cup basil leaves + ½ cup coriander leaves
Method Combine all ingredients and mix well, allowing 10 minutes to develop its full flavor. Serve on top of the grilled Thai chicken with rice salad and Zee sweet salsa.
