BOM Sauce Ingredients 200gm lean smoked bacon 2 tbsp olive oil 1 sliced onion 300gm ¼ portabella mushrooms Few sprigs thyme and Hand full of chopped Italian parsley Season to taste
Steak Sandwich Ingredients 4 / 150gm marinated steak sandwich meat. Scrape off excess marinade and save it. 4 Toasted Italian bread slices lined with pesto mayonnaise Few leaves of curly endive lettuce

BOM Sauce On a medium heat, sauté bacon well done but not crispy in olive oil. Stir in onions and cook until fragrant. Add mushrooms and thyme to the onions. Reduce mushroom juices until therefs no more moisture left. Season to taste with salt, pepper and parsley. Serve hot or cold on top of the steak sandwich.
Steak Sandwich Cook steak sandwich on aggressive heat. Mix ¼ mayo with 2 tbsp pesto sauce. Spread pesto mayo on both sides of toast. Place cooked steak on lettuce. Spoon on BOM sauce and a little more lettuce on the meat. Pop the lid on and away you go!!!
