4 marinated steaks from Creative Meats 2 red capsicums cut into ¼ seeds removed 1 red onion cut into ¼ 6 cloves garlic kernels 1 eggplant cut into thick slices ¼ Jap pumpkin
Grilled Vegetable Salad 200gm semi dried tomato 100gm kalamatta olives 10gm Greek fetta cheese cubes 1 head curly endive lettuce, washed and spun dry 1 radicchio, washed and spun dried 1-cup garlic croutons or crushed garlic sticks
Blue cheese dressing 2 cloves crushed garlic 1 whole red shallot peeled ½ cup Mayonnaise ¼ cup sour cream or crème fraiche 1 tbsp white balsamic vinegar 100gm blue cheese (Roaring 40s blue gKing Islandh) Salt pepper to taste
Blitz everything together in a food processor until smooth. If the dressing to thick just add a litter milk or cream to thin it out.

Grill vegetables on a ribbed grill or BBQ with no oil for 5 minutes or until just tender. Grill marinated steak to your liking and allow them to rest before slicing. Once all the vegetables are cooled down toss them through the tomato, olives, lettuce and dressing. Portion out on a large serving platter, garnish with thinly sliced steak and croutons
