Combining the goodness of Mediterranean vegies with mouth-watering halloumi, this recipe is to die for.

2 peppers, red, green, yellow seeded and quartered 2 courgetted, halved lengthways 2 small aubergines, halved lengthways 1 fennel bulb, quartered Olive oil for brushing 115g Halloumi cheese sliced Salt and pepper freshly ground
TAHINI CREAM 1 cup tahini paste 1 garlic clove crushed 2 tbsp olive oit 2 tbsp lemon juice ½ cup cold water

*Do not grill the Halloumi in advance as it will go rubbery
1. Preheat the grill or BBQ until hot. Brush the vegetables with the oil and grill until just browned and softened.
2. Place the vegetables in a shallow dish and season. Allow to cool.
Brush the cheese slice with oil and grill on both sides until just
charred. Add cheese to the vegetables.
To make the tahini cream place all the ingredients, except the water in
a food processor. Process for a few seconds, then, with the motor still
running, pour in the water and process until smooth. Serve trickled
over the vegetables and cheese
