6 / 180gm pork loin steaks (or pork chops) 1 tbsp olive oil Salt & pepper Few sage leaves
Braised Apple and Pear 2 golden delicious apples unpeeled, cored and diced 2 Gold rush pears unpeeled, cored and diced 2 tbsp brown sugar 2 star anise 1 cinnamon quill 1/3 cup white balsamic vinegar

Pre heat your oven to 220c. Pat dry the pork with kitchen paper, toss them with some olive oil salt and pepper. Space them evenly on a roasting pan so they are not touching. Season with some sage leaves (fresh or dry). Put them into the oven to roast for 15 minutes. Allow the cooked pork to rest for 5 minutes before serving.
Braised Apple and Pear Method Put every thing in a 2L saucepan and quickly simmer the apple mixture for 10 minutes or reduce to chutney consistency.
Serve the pork on toasted mash potato with a drizzle of braised apple and pear and a side of steaming string beans flavored with butter and toasted almonds.
