A quick and tasty pumpkin soup recipe using the Herdsman June 08 product of the month the Pumpkin Soup Mix.

1 pk Pumpkin Soup Mix (available from the preprepared section – back wall) 300g Diced Potatoes 1 clove Fresh Garlic 300ml Fresh Cream 1 tbsp Vegetable Stock (powder) Water Salt & Pepper (to taste)

Cook off leek, celery and garlic, add pumpkin and potato and vegetable stock – add water – just covering ingredients. Bring to boil then simmer for approx 45 minutes. Remove from heat and blend till smooth, add cream, salt & pepper to taste and put back on heat and bring back to boil slowly.
