Quick and easy, these delicious savoury tarts are a great recipe idea for entertaining.
Preparation time: 20 minutes
Baking time: 20 to 25 minutes @ 200c oven
Makes: 10 to 12 standard muffin size

700gm fresh ricotta cheese 2 beaten eggs Salt & Pepper 100gm chopped “queen of Spain” olives 100gm smoked salmon 1 tbsp pesto (red or green) 1 punet Mini Momoko tomato quartered

Combine ricotta, seasoning and egg and beat well. Toss through the
chopped olives and the filling is done. Brush the muffin tin with
olive oil then line it with smoked salmon like pastry. Fill each with
ricotta mixture topped with a teaspoon of pesto then the tomato.
Serve with a spinach, rocket salad with lemon & olive oil dressing topped with parmesan cheese shavings. |
