Serves: 6 to 8 people Preparation time: 10 minutes Cooking time: 20 minutes
100gm Smoked bacon pieces 4 TBL Extra V Olive oil 2 Leeks, split in half then chopped 8 Royal blue potato, peeled and chopped 4 Tbsp Plain flour 500gm Fish pieces (All sorts) 500ml Fish stock (recipe follows) 200gm Mussels or clams 2 Sweet corn cob kernels 500ml Milk 1/3cup Italian parsley chopped Salt & Pepper and Tabasco to taste |

Using a heavy base pot set on low heat brown bacon until crispy in Olive oil. Add leeks and potato, cook out until the potato is tender and starts to collapse. Stir in fish pieces and braise for 4 minutes or fully cooked. Add stock, mussels, corn and simmer for 5 minutes. Thin out by adding enough milk to get the right consistency add chopped parsley and season to taste. Serve with hot garlic bread smothered with pesto. |
