Stir-fry rules • Pre heat wok on medium heat for 3 to 5 minutes • Dry meat with kitchen paper and keep pieces about the size of your thumb. Toss oil through the meat not in the wok • Don't over load the Wok at one time, do it stages • Keep the foods moving like tossing a salad. • Keep the heat on the rise during the cooking process • Add flavoured sauces at the end of the stir-fry Using a pre-heated wok quickly seal beef pieces, a few at a time in some grape seed oil, remove cooked beef strips and keep warm. Allow the wok to regain stir fry temperature again. Add stir fry packed vegetables then cook the vegetables in a little stock for 5 minutes or until just tender. Stir through cooked beef strips pieces; add noodles and seasoning sauces to taste. Sprinkle with roasted almonds as a garnish then serve.
