Spicy chicken salsa wraps  Rate Recipe
A simple, exotic dish great for a light lunch or dinner.

Makes                               6 to 8 wraps

6 ripe tomatoes, seeded and chopped
½ red onion finely chopped
1 avocado, diced
2tbsp olive oil
1 tbsp lemon juice
½ cup chopped mint or coriander
   
500gm sate chicken pieces

rocket and thinly sliced lettuce.
1 tub of sour cream
1 packet fresh tortillas


Just toss tomatoes, red onion, avocado, olive oil, lemon juice and coriander gently to form a salsa. Set aside and keep chilled.

Cook chicken using a non-stick pan with no fat for 10 to 15 minutes on medium heat.

Wash rocket and thinly sliced lettuce.

To serve, place a little sour cream onto the tortilla, top with salza, cooked chicken or lamb then some lettuce or rocket. Wrap like a parcel then repeat.
