2 bunches of asparagus, trimmed 1cm from the base 3 tbsp water 1 tbsp extra virgin olive oil 1 tbsp fresh thyme ¼ lemon wedge Pinch sea salt & pepper
1 whole smoked trout or salmon skinned then remove meat 150gm fresh parmesan cheese shavings
Olive Oil Dressing 1 tbsp French mustard
1-teaspoon honey
Zest and juice of 1 lemon
4 tbsp extra virgin olive oil

Pre heat your wok or frying pan until warm. A drop of water in the pan turns into steam instantly. Sauté asparagus by itself in the pan. After one minute, toss in water, oil, herb and lemons then place a lid on quickly and steam-fry for another 30 seconds. Remove lid and sauté for another 30 seconds. Season with sea salt & ground pepper to taste and a little drizzle of extra virgin olive oil.
Olive Oil Dressing Method In a small bowl combine mustard, honey and lemon into a smooth paste. Slowly whisk in olive oil until a dressing forms. Plate up 6 to 8 steamed fried asparagus drizzled with a little dressing scatter some smoked trout flakes over the asparagus then a few parmesan cheese shavings. Garnish with a few chopped chives.
