6 peaches or nectarines split in half, stone removed
150gm amaretti biscuit, crushed
1 beaten egg
50gm macadamia nuts roughly chopped or almonds, hazel nuts
3 tbsp brown sugar
3 tbsp butter
1-cup fresh orange juice |

| Using a melon baller, scoop out a little flesh from where the stone was and place this into the stuffing mixture. Mix fruit flesh, biscuit, egg, nuts and butter to form the stuffing. Pile the peach cavity with stiffing mixture and place them onto a well-buttered dish lined with orange juice and then baked uncovered and the fruit is just cooked. Serve hot or cold with a drizzle of baking syrup and double cream on the side. |
