Pork Ingredients 500gm diced shoulder pork or pork fillet 1 bottle Teriyaki sauce 150ml water
Method Simmer diced pork in teriyaki with a little water for 10 minutes drain and set aside.
Crispy Pork Batter Ingredients ½ cup corn flour ¼ cup plain flour 1-teaspoon baking powder 150ml water
Method Sift flours and baking powder into a mixing bowl then beat in enough water to form a thick batter. Set aside
Sweet & Sour Sauce Ingredients 2 tbsp light olive oil 2 celery sticks thinly sliced ½ white onion 1cm cubed ½ red capsicum 1cm cubed ½ cm crushed ginger 1 clove crushed garlic 200ml tomato sauce 50ml white vinegar 1tbsp soy sauce
Method Using a 2 L sauce pan sauce all vegetables with ginger & garlic for 3 minutes And the vegetables are well cooked and fragrant. Lower the heat, then stir in tomato sauce vinegar and soy simmer for 2 minutes.
Assemble Frying Oil Ingredients ½ cup peanut oil ½ cup extra virgin olive ¼ cup plain flour

| Slowly heat up blended oils to 160c using a heavy based 4 L pot. Toss drained cooked pork pieces in flour and pop then into the batter to receive a thin coating. Gently drop in a few pork pieces at a time and cook until golden brown until all the pork is done. Serve at once with rice and smothered in sweet & sour sauce. |
