This delicious Pasta is a home based secret that has just recently been introduced by the Herdsman kitchen. What better way to enjoy it than with Chef Dale's smoked salmon recipe.

1 packet of the Herdsman Linguine steaming in a colander 4 tbsp clean skin olive oil 1 medium size eggplant finely cubed 3 cloves crushed garlic 200gm cubed Regal Salmon (your choice in flavour) ˝ cup sour cream ˝ cup chicken stock 2 cups spinach leaves ˝ cup Parmesan cheese ˝ cup chopped dill or basil leaves

Pre heat a large non stick wok on medium heat and gently sauté garlic until fragrant. Add eggplant and slowly cook until just tender. Adjust the pan heat to high!! Then add cooked pasta and salmon pieces, sauté well.
To finish off add the sour cream, enough stock to form a sauce; a good hand full of spinach sauté well then cheese and fresh chopped herb to garnish. Serve with Herdsman tossed salad and crusty bread from the bakery.
