Avocado Chocolate Mousse

Part One:


½ cup maple syrup

2 ripe avocadoes

1 tsp vanilla extract

½ cup cocoa powder or raw cacao

Small pinch of salt


Combine all ingredients in a blender or food processor on high speed. Blend for approx. 30 seconds or until smooth.
Add a splash of water or coconut milk to make a lighter mousse. Adults only, add a splash of your favourite liqueur to make drunken mousse. Spoon into individual glasses and allow to set in the fridge.
