Part One:


  • 50 gms butter
  • 1 clove garlic chopped
  • 50 gms walnuts
  • 50 gms rocket
  • 100 gms goats cheese


Heat pan to medium, add butter, garlic and saute for about 1 minute.

Add roughly chopped walnuts cook for another minute then add the beetroot spaghetti.

Cook for 1-2 minutes and then add rocket, toss through and then serve with crumbled goat’s cheese on top.
