Greek Potatoes & Grilled Lamb Chops

Part One:


Greek Potatoes

100g diced onions

1x red capsicum sliced

10ml lemon juice

10ml olive oil

5g minced garlic

1g oregano

1g rosemary

15g tomato paste

400g gourmet potatoes -cut in ½ and steamed till just tender about 10 mins

Pinch salt & pepper

25ml water

Lamb Chops– cutlets or chops work well with this dish

Lamb chops from Creative Meats 1-2 per person

Splash of olive oil

Pinch of fresh oregano about 2 stems

2 stems of fresh thyme

1 lemon- zest and juiced

Good pinch of cracked black pepper

Splash of red wine


Method for Greek Potatoes

Mix all ingredients together and make sure that the potatoes are coated well.Roast on 180°C till the potatoes are nicely colored. About 20 to 35 minutes

depending on the potatoes.

Method for Lamb

In a bowl add the lamb, olive oil, herbs, lemon zest, red wine & pepper. Mix well and let marinate for 1 hr at room temperature. Heat the BBQ char grill and cook the lamb to your liking and then let the lamb rest for about 10

minutes.  Serve the potatoes with the grilled lamb and a side of steamed green beans or a leafy salad.
