Chef Dale’s Best Burgers

Part One:


  • 500gm lean Beef Mince
  • 500gm lean Pork mince
  • 1/2 cup bread crumbs
  • 1 egg
  • 3 tbsp Chef Dales Meat & Chicken Blend lightly toasted in olive oil
  • 1 red onion finely chopped
  • 4 tbsp smokey BBQ sauce or tomato sauce
  • 100gm Blue cheese crumbled


  1. Place in a large mixing bowl, beef mince, pork mince, crumbs and egg.  Sauté onion in olive oil then lightly toast spice blend until fragrant
  2. Add onion and spice blend to the mince mixture followed by BBQ sauce and cheese.  The secret to a great burger is throughly mixing all the raw ingredients together
  3. Form eight burgers patties then store them covered in the fridge to rest for 20 minutes allowing all the flavour to develop fully
  4. To cook, lightly brush burgers with olive oil and cook for 3 to 5 minutes per side for just pink in the middle

Serve on a lightly toasted brioche bun with a chutney of your choice.
