Chicken & Ricotta Pasta Salad

Part One:


  • 1 500 gms pack of spirelli or penne
  • 20 ml Olive Oil
  • 1 whole cooked chicken
  • 200 gms ricotta cheese
  • 100 gms fresh rocket
  • 100 gms semi sun-dried tomatoes
  • Salt & Pepper


Cook and drain pasta. Pour olive oil over the pasta and lightly toss through.  Debone and shred the chicken.

Add to the pasta the chicken and ricotta cheese with fresh rocket and semi sundried tomatoes (or if you have the time roast of a packet of grape or cherry tomatoes.)
Season with salt and pepper and lightly toss together.
