Spiced Lamb Mince & Pumpkin, Toasted Flat Bread

Part One:


1/4 Kent pumpkin, 1cm sliced, dry roasted @200c /10min

500gm WA lamb Mince, course

4 tbsp Australian EVOO

4 Crushed Garlic

4 tbsp Meat & Chicken Spice

4 tbsp Parsley & Mint chopped

4 Flat Breads, sliced in half

Rocket leaves & sliced Gruyere cheese

Tzatziki to serve


Double brown mince on medium heat for 15 minutes with a dash of olive oil, brown to a consistency of crispy bacon.  Add garlic and spice blend, cook until fragrant, add chopped herbs, set aside.  Fill flat bread with lamb mince, then pumpkin, rocket then cheese.  Grill flat bread for 8 minutes, serve with Tzat-ziki on the side.  Enjoy!
