Here’s how to get the best out of your artichokes: Snip off the tips of the petals, if you see any little thorns on the end of the petals, snip them off also. Slice around an inch off the tip of the artichoke with a serrated bread knife. Remove the small petals at the base and stem. Cut off any excess stem, leaving about an inch. Rinse under cold water.  While rinsing, open up the petals a little bit so that the water can get inside.
